LITTLE FISH, BIG DISH
No shopping lists or long simmering sauces—this pasta is a quick, no-fuss dish. It’s also quite flexible. Don’t have capers? Use olives! Don’t have mackerel? Use tuna! The bread crumbs add a crispy texture and a wallop of umami; make a double batch and use the extra to top a Caesar salad or roast vegetables. 3 tbsp (45 mL) unsalted butter 1 tsp (5 mL) anchovy paste (or finely chopped anchovy filets) 1/2 cup (125 mL) panko bread crumbs 1 package (500 g) calamarata or paccheri pasta (spaghetti is ok, too) 1/2 cup (125 mL) extra virgin olive oil 4 cloves garlic, minced 1/3 cup (80 mL) capers, drained 1 tsp (5 mL) dried chili flakes 1 1/2 tsp (7 mL) finely grated lemon zest 3 tbsp (45 mL) fresh lemon juice 2 cans (each 120 g) mackerel packed in olive oil, drained 1/4 cup (60 mL) basil, mint or flat-leaf parsley leaves 1. Heat butter in a skillet over medium-high heat. Cook, stirring constantly with a wooden spoon, until it foams and turns golden brown, 2 to 3 minutes. Remove pan from heat and whisk in anchovy paste then stir in panko. Reduce heat to medium and return pan to burner. Cook, stirring constantly, until deep golden brown, 2 to 3 minutes. Transfer to a plate and set aside. 2. Bring a large pot of lightly salted water to a boil. Cook pasta, according to Pantry Pasta with Canned Mackerel & Anchovy Bread Crumbs
the pasta, adding more pasta water as needed to moisten and coat. Once pasta is coated and heated through, add lemon juice and mackerel. Toss a few more times to incorporate. 4. Transfer to a serving platter or individual plates. Sprinkle with anchovy bread crumbs and herb of choice.
