SAGE ADVICE

Commonly found in good grocery stores and cheese shops, Sage Derby (pronounced “DAR-bee”) is a firm British cheese mottled with veins of sage—it tastes like fall. If you can’t find it, a good quality aged cheddar and a little chopped fresh sage will do the trick. Sage Derby & Turkey Grilled Cheese with Cinzano Ketchup CINZANO KETCHUP 1 can (396 mL) tomato paste 1 cup (250 mL) corn syrup 1 cup (250 mL) red wine vinegar 1 cup (250 mL) Cinzano Rosso Sweet Vermouth (LCBO 215251, 1 L, $14.80) 1/2 tsp (2 mL) onion powder 1/2 tsp (2 mL) garlic powder 1/2 tsp (2 mL) finely ground black pepper 1/4 tsp (1 mL) ground cloves 1/4 tsp (1 mL) ground allspice 1/4 tsp (1 mL) ground coriander GRILLED CHEESE 4 slices brioche 6 oz (170 g) sliced roasted turkey 6 oz (170 g) sliced Sage Derby cheese 1/4 (60 mL) cup butter 1. To make ketchup, combine all ingredients in medium pot and bring to a simmer. Allow to cook over low heat for 20 minutes, stirring often. Remove from heat and cool completely. Pass through fine-mesh sieve and transfer to airtight container. Refrigerate up to 1 month. (Since this will make more than you need, you can freeze leftovers up to 6 months. It’s a versatile condiment that can stand in anywhere you’d

normally use ketchup: fries, eggs, burgers, etc.)

3. Heat a nonstick frying pan over medium-low to medium heat. Add sandwiches. Cook until well-browned and cheese is melted, 4 to 5 minutes per side. Serve with Cinzano ketchup.

2. To make grilled cheese, butter two slices of brioche thoroughly and place them butter side down. Divide cheese and turkey between slices. Top with remaining brioche slices. Butter tops thoroughly.

LCBO 408054, 473 mL, $2.85 English ale is a natural match for this sandwich. Malty sweetness contrasts the Cinzano ketchup, and the ale’s caramel and hop flavours complement the sage, cheese and turkey.
