BEET & GOAT CHEESE TERRINE WITH ROASTED WALNUT VINAIGRETTE Holiday 2005

Vegetable terrines had their moment a while back, but they’re labour-intensive and have fallen out of favour with the home cook. Who has the time for slicing, layering, pressing and chilling a beet terrine, especially when you can whip off an equally delicious salad with the same flavours? That’s precisely what we did, adding orange segments for their juicy acidity and turning the goat cheese into a creamy spread underneath. It’s just as pretty as the terrine and can be served family style.
