ONTARIO SPOTLIGHT With aperitif culture still on the rise, more Ontario producers are making their own versions, such as Dillon’s Sweet Vermouth (LCBO 571133, $21.95), made in Niagara with local fruit and herbs.
Niagara Manhattan Inspired by the lower alcohol Reverse Manhattan, this recipe calls for more vermouth than spirit, the opposite of the traditional formula that uses this aperitif as a modifier. 2 oz brandy 3 oz sweet vermouth (red) 3/4 oz Benedictine or other herbal liqueur Dash of aromatic bitters, such as Angostura 6 Amarena cherries for garnish 1. In a mixing glass filled with ice, combine brandy, red vermouth and herbal liqueur. Stir for 30 or more seconds to create dilution from melting ice. Strain into a small carafe and keep in the refrigerator until guests arrive. 2. Pour into chilled tiny glasses, add a drop of bitters to each and garnish with a cherry on a skewer.
