Modern IPAs and Hopped Beers Hops are the flowers responsible for bitterness in all beer, but their aroma is also a defining feature of Pale Ales and India Pale Ales (IPAs). Their essential oils can be floral, spicy, woody or herbal—or fruity, which is the hops expression we’re focusing on in this flight. Each of these beers speaks to the sweetly charred pineapple, creamy avocado and salty queso fresco in our Pulled Pork Torta, but the accents land differently with each pairing.
Left Field Brewery Foreign Substance IPA LCBO 53224, 473 mL, $5.10 Features new hop and botanical oils known as Euphorics, which in this instance push the aroma toward a peach orchard at the height of harvest. Bellwoods Brewery Ghost Orchid IPA LCBO 25454, 473 mL, $5.00 Uses the Nelson Sauvin hop, which shares similarities with Sauvignon Blanc grapes: flinty, with notes of white grape, gooseberry and white flowers.
With tortilla chips and grated cheddar, any leftover fillings for this Mexican-style sandwich can be transformed into a scrumptious plate of nachos.
Great Lakes Brewery Krush! Hazy Pale Ale
LCBO 53329, 473 mL, $3.35 Uses the experimental American Krush hop to bring guava, grapefruit, mango and pineapple to the party, with only minor bitterness.
