To David Schonberger, the woods surrounding his home, near Tillsonburg, are magic. As the owner of Ottercreek Woodworks Inc., he invites guests to discover that for themselves as part of his award-winning From Tree to Table, a hands-on experience, now in its sixth year. It begins with a stroll through the Carolinian forest, known for its rich diversity of plant and animal life. With the sound of trees groaning in the wind in the background, Schonberger shares his love of the land before guiding his group to his workshop to learn how to make boards for charcuterie crafted from local hardwood, like cherry and walnut, complete with a fulfilling lunch. With that in mind, we created a menu to satisfy your hunger, ideal for when you’ve just come in from the cold.
