Red-skinned potato mash with buttermilk & herbs

Red-skinned potatoes have thin skins and a creamy texture that make them the perfect candidate for this lighter, fresher-tasting mashed po- tato. Steeping the milk with bay leaf and mustard and adding buttermilk and a fistful of herbs at the end creates a side dish that holds its own with any holiday protein.

Technique tip Want more flavourful and better-­ textured mashed potatoes? Boil them whole and unpeeled! While they definitely take more time to cook, this method keeps potatoes from absorbing excess water and losing the starch and flavour that makes the best mash.
