Yukon gold mash with roasted garlic, saffron & crème fraîche

This gloriously rich restaurant-style mash is made good with plenty of butter and cream (you knew that was the secret, didn’t you?). Fold- ing in crème fraîche makes it extra creamy, and roasted garlic gives it a nutty complexity that pairs beau- tifully with saffron to create a truly special side.

Tool tip If you embrace a little texture in your mash, the potato masher is the simplest tool for the job, but perfectly fluffy potatoes require a ricer. Like a giant garlic press for potatoes, it will take your mashed potato game to new heights and give you perfect results every time.
