HAM, CRANBERRY & SWISS PINWHEELS

BLOOD ORANGE MOSCOWMULE Blood orange is my favourite winter citrus. Seeing it start to appear at the market gives me all the festive feels. The blood orange brings a hint of tartness and sweetness, and the most gorgeous natural pink hue to this classic Moscow Mule. 1 1/2 oz vodka, such as Titos’s Handmade Vodka ( LCBO 597559, $34.95) 1/2 oz Grand Marnier 3 oz freshly squeezed blood orange juice Juice of 1/2 lime

3 oz ginger beer Blood orange slices for garnish

Lime wedge for garnish Fresh mint for garnish

Think of these pinwheels as a savoury twist on cinnamon rolls. Featuring the holiday flavours of smoked ham and cranberry sauce, this rec- ipe is a great make-ahead option that can be reheated just before serving. Short on time? Use store-bought pizza dough. 1 cup (250 mL) warm-to-touch water 1/2 tsp (2 mL) instant yeast 3 tbsp (45 mL) extra virgin olive oil, divided 1/2 tsp (2 mL) salt 2 cups (500 mL) all-purpose flour, sifted, plus more for dusting 1 clove garlic, grated Salt and pepper to taste 1/2 cup (125 mL) cranberry sauce, homemade or store-bought 1 1/2 cups (375 mL) grated Swiss cheese 1 In the bowl of a stand mixer fitted with the dough hook attachment, whisk together water, yeast and 1 tbsp (15 mL) olive oil. Let stand for 5 minutes to allow yeast to activate. 2 With mixer on low speed, add salt and flour. Knead until dough becomes smooth and elas- tic, about 5 minutes. 3 Shape dough into a ball and transfer to a lightly greased bowl. Cover with a damp towel and let rest until dough doubles in size, about 2 hours. 4 Punch down prepared dough and transfer to a lightly floured surface. Roll out dough to form a 12 x 16-inch (30 x 40 cm) rectangle. 5 In a small mixing bowl, whisk together remaining olive oil, garlic, salt and pepper. Brush mixture over dough, followed by a layer of cranberry sauce. 6 Evenly distribute cheese over cranberry sauce, then overlap ham slices. Tightly roll dough lengthwise. Trim and discard ends. 7 Line a baking sheet with parchment paper. Slice into eight 2-inch (5 cm) wide pinwheels and transfer to prepared baking sheet, spiral-­ side down. Cover with a damp towel and let rise for 1 hour. 8 Preheat oven to 375°F (191°C). 9 Brush pinwheels with egg and sprinkle with poppy seeds. 10 Bake until golden brown and cooked through, 30 to 35 minutes. Serves 8 8 thin slices smoked ham 1 large egg, lightly beaten Poppy seeds for garnish

1 Pour vodka, Grand Marnier, blood orange juice and lime juice into a copper mug filled with crushed ice. 2 Top with ginger beer and stir. Garnish with blood orange slices, lime wedge and mint.
