ORANGE STOUT SPICE CAKE While dark, malty stout may not be everyone’s favourite pint, its deep, toasty flavour works so well in this special holiday cake. Warm spices and molasses come together in a rich, tender crumb, and the cake is glazed with orange syrup and candied strips of peel for a special decorative flourish. Feel free to substitute porter for stout.

WHAT WE USED We tested a variety of stouts for this recipe, and you can certainly use whatever you have on hand, but our favourite was Henderson Export Stout ( LCBO 13445, 473 mL, $3.80). This award-winning beer has notes of chocolate and coffee that add depth and richness to the cake while pairing beautifully with the ginger and candied peel.
