Whiskey Coming from the Irish uisce beatha (pronounced ISH-ke BA-ha), meaning “water of life,” Irish whiskey was once the most popular spirit in the world. Boasting 28 dis- tilleries in the late 1800s, it suffered a long decline in popularity in the 19th century, leaving only two distill- eries operating by the 1960s. Thankfully those times are behind us, and Irish whiskey has enjoyed a resurgence over the last several years with more than 30 distilleries now active and more in the planning phase.
