HIDDEN TREASURES

Windsor-Style Pizza

Cooked on cornmeal in stone deck ovens, these thin-edged pies are recognized by the sweet and spicy oregano-spiked arrabbiata-style sauce, distinct shredded pepperoni and canned mushroom topping that are always over, not under, local Galati mozzarella cheese. Though it’s rumoured to have originated at now-shuttered Volcano Pizzeria back in 1957, versions made at Windsor-based Antonino’s Original

Pizza, Arcata Pizzeria, Armando’s Pizza, Naples Pizza, Mario’s Restaurant and Sam’s Pizzeria are currently enjoyed by many.

As the Dairy Capital of Canada, Oxford County is home to fine artisanal cheesemakers who turn cow, sheep, buffalo and goat milk into legend- ary goods. Discover the 62 award-winning products—most of which can be found along a self-guided cheese trail—including a Mexican Oaxaca cheese at Local Dairy Products in Ingersoll and Swiss-influenced Five Brothers from Gunn’s Hill Artisan Cheese. Bright Cheese and Butter’s aged Asiago is still produced at their 1800s factory, while full-flavoured Farmstead Gold Gouda has won Mountain Oak Cheese in New Hamburg 13 national and international awards.

CHEESE BY VINCE NOGUCHI; BURNT END EGG ROLLS BY JOHN FINNIGAN

Burnt End Egg Rolls

Packed with pork, cabbage and other proprietary ingre- dients, these hand-squeezed open-ended egg rolls are deep- fried in lard and served with homemade plum sauce. Sold at the Canadian Tire Centre during Ottawa Senators’ and 67’s games, the stubby, meaty snacks are most well-known at third-generation-owned Golden Palace, where they’re made daily by four women—some of whom have worked there for over 40 years—and shipped across the country.
