e always tend to think of Thanksgiving as a grand get-together for friends and family but this time we’ve sized it down to a celebration for two. Of course, if you’re cooking for a larger gathering, the recipes double and triple well without losing any of their complexities of taste. The theme of this menu pays homage to the time, centuries ago, when Thanksgiving really was an expression of sincere gratitude for a good harvest—enough to ensure survival through the long winter ahead. Its inspiration is the cornucopia of indigenous ingredients that the first European settlers would have found when they reached the New World, foods already understood and honoured by First Nations peoples. Those pioneers learned to adapt their own European culinary traditions to make the most of what they could hunt, gather and grow; in the same way, these recipes take heritage ingredients and bring them up to date with modern techniques—the old flavours of this great country given a contemporary twist.
