A crisp and slightly watery cabbage, bok choy has more in common with spinach and chard than most of the other cruciferous vegetables. Its tender stems and tops lend themselves to stir-fries and Asian flavours. With a history rooted in England and Holland, Savoy is also known as the king of cabbages. Its mild flavour and crinkly leaves are well suited to salads, soups and stews.
