LCBO Food & Drink Autumn 2019

BACO ONTARIO’S OWN NO I R Trust us: Baco Noir deserves your attention. Grown right here in Ontario, it’s awesome in so many ways: as a Thanksgiving wine, in cocktails, with all kinds of pairings and in cooking. By Chris Johns | photography by rob fiocca

Hearty, robust and almost ideally suited to our climate and soils, Baco Noir is one of the fastest- growing varieties among wine drinkers in the province and is quickly becoming Ontario’s signature grape.      Sometimes described as a meatier Pinot Noir, with all of Pinot’s ripe cherry and tart raspberry flavours but with even more depth, Baco Noir is renowned for its dark fruit flavours, full body, herbal notes and soft, smoky tannins. The contemporary style emphasizes careful management in the vineyard and the balanced use of oak in the winemaking process to create lush, round, full-flavoured wines that are exactly in keeping with the modern consumer palate.
