Ontario baco noir terroir

From the southernmost place in Canada to every point on the compass where Ontario grows wine, Baco Noir is there. Part of what makes Baco Noir such a uniquely Ontario grape is that it grows in every recognized wine region in the province.

varieties that when you put them into blends they make synergies happen, where the whole is greater than the sum of its parts. Baco is one of those grapes. We tend to blend it with Cabernet Sauvignon and quite often Merlot and it really brings out the best of the other grapes.”

Baco Blends While complex and sophisticated enough to stand entirely on its own, Baco Noir also makes an outstanding blending partner. Baco adds body when blended with Marechal Foch, softens the more tannic aspect of Cabernet Sauvignon and Merlot, and enriches the colour of Cabernet Franc.

Baco is blended with Cab- ernet Franc and Cabernet Sauvignon and then aged in French oak in this distinctive wine. Blackcurrant and cran- berry are carried along by a nose of vanilla and leather.
