Lively but not too tart, Castelo do Mar’s version shows delectable honey­ suckle, peach blossom and lemon zest aromas. Henri Bourgeois Les Baronnes Sancerre VINTAGES 542548, $31.95 If you revere a true original, let Sauvignon Blanc reprise its most famous role—as Sancerre from the Loire. Les Baronnes gives a whiff of flint among the gooseberry, citrus, apple and grassy aromas. Crumbly Crottin de Chavignol goat cheese is the ultimate pairing.
