Mushrooms are springing up like, well, mushrooms, this time of year— and they do a hearty, tasty job of replacing meat in comfort-food classics.

Bloomy, ruffled mushrooms have enchanting associations from fairy-tale toadstools to their fascinating growing process and mycelium colonies—and even to their purported medicinal qualities. With their interesting shapes and textures and types offering a range of flavours, it’s easy to see why many varieties have become more readily available in the last decade. Hearty and rich with umami flavour, mushrooms are getting extra attention for being the ultimate meat replacement.
