NEW IN WHISKY Just when you think you’ve tasted it all, whisky all over the world continues to reinvent itself, with new innovations or by returning to authentic old ways. A Scotch for all The prominent smell and taste of peat, the funky vegetal material that’s burned to give some Scotch its smoky quality, can be a deal- breaker for certain spirits sippers. Speyburn 10 Years Old Single Malt Scotch ( LCBO 15507, $59.95) has just a whisper of it, plus juicy apple, lemon zest and butterscotch. Two sides of Japan The famously pioneering Japanese whisky brand Nikka distills distinct whiskies in two locations. Taste maritime peat in Yoichi Single Malt Whisky ( LCBO 10242, 700 mL, $91.15) from Japan’s northernmost island of Hokkaido and a softer, sweeter style in Miyagikyo Single Malt Whisky ( LCBO 10224, 700 mL, $92.15) from Japan’s main island, Honshu. Rye comeback Much of bourbon and other American whisky typically matures in barrels made of American oak. However, Heaven’s Door Straight Rye Whiskey ( LCBO 14583, $124.95) gets its subtle tropical fruit, spice and vanilla notes from a final year ageing in some of the finest-quality French oak casks.
An American whiskey can be labelled “straight” when it has been oak-matured for at least two years.
