LITTLE FISH, BIG DISH

Green Sardine Sandwich

While the strong flavour and aroma of canned sardines are not for everyone, marinating them in vinegar tones these down and leaves you with delicate flakes of vinegary fish. Paired with creamy avocado and lots of greens, it’s like a salad and sandwich in one.

1. Drain sardines and place in a bowl with vinegar and lime zest. Marinate 30 minutes. 2. Mash avocado flesh in a mixing bowl with mayo and lime juice. Season with salt. 3. Toast bread and spread avocado mixture onto all four slices. Drain sardines and divide over two slices of bread. Arrange the onion and cucumber slices over sardines, then sprouts and spinach. Close sandwiches and cut in half. Secure each half with a toothpick and garnish with pickled onions or olives.

1 can (120 g) sardines packed in olive oil 1/4 cup (60 mL) apple cider vinegar 1 tsp (5 mL) lime zest 1 large ripe avocado 3 tbsp (45 mL) mayonnaise 1 tbsp (15 mL) lime juice Salt to taste 8 thin slices English cucumber 1 cup (250 mL) alfalfa sprouts 1 cup (250 mL) baby spinach Pickled onions or pitted green olives to garnish 4 slices seeded bread 2 thin slices white onion

[ WHAT TO SERVE ] Bellwoods Brewery Jelly King LCBO 14280, 500 mL, $6.50 This sour beer is a great match. Its juicy hops, tangy fruit, palate-cleansing carbonation and tart acidity work wonderfully with the challenging ingredients in this sandwich.
