With a dose of bourbon, crunchy peanuts and toasted sesame seeds, caramel corn becomes the ultimate fall snack.

BOURBON CARAMEL CORN (P. 174)

Digging into a bag of salty- sweet caramel corn evokes memories of the final baseball games of the season. Here, it gets a decidedly adult twist with a generous glug of bourbon, which brings its toffee-vanilla flavours to the caramel. Peanuts and sesame seeds are unconventional additions, but we think you'll agree their nutty flavours and crunchy textures are irresistible. WHAT WE USED With notes of toffee, caramel and ginger, and a smooth vanilla finish, Evan Williams Kentucky Straight Bourbon (LCBO 405845, $28.95) is a natural in the dessert kitchen. Here, it works exceptionally well with brown sugar, butter and popcorn. —Soo Kim + Try pecan pieces instead of peanuts along with 3/4 tsp (4 mL) smoked paprika for a crimson hit of smoke. + Cellophane bags filled with Bourbon Caramel Corn and tied up with a bow make perfect fall host gifts or party favours.

When the popping slows down to a few kernels at a time, remove popcorn from heat to prevent burning.
