While the Caesar has long been a signature Canadian drink, recent crazes for Dirty Martinis, bacon fat–washed bourbon cocktails and other innovative mixology have pushed savoury flavours to the top of bar menus. To recreate mouth-wateringly delicious drinks at home, raid your pantry: everything from mushroom and tomato to broth and seaweed helps give these drinks layers of toasted, roasted and umami (the so-called fifth flavour) notes. Some of these cocktails have spicy elements that you can amp up, too, depending on your tolerance for heat. Explore the ingredients, techniques and garnishes that can bring delicious, piquant notes to your next cocktail occasion.
