On an organic farm near Collingwood, Tim and Kimberley Schneider of Duntroon Cyder House grow heritage apple varieties, from Golden Russets to Empires, that yield complex, drier “cyders” (made and spelled English-style, reflecting where Tim learned the craft). Their heritage orchards, with deep roots and bush-style trees that get hand-shaken at harvest, produce fruit with more complex flavour, depth and acidity, he believes. As an engineer and de-carbonization expert, Tim is deeply concerned with sustainable practices, on the farm and beyond. Duntroon supports the long-term survival of local heritage apple orchards as “juice blocks,” buying their fruit for cider-making— and preserving Ontario’s agricultural legacy. Ontario’s microbreweries are frequently anchors for their neighbourhoods, and many of them create collaboration beers to support charities or causes close to their hearts, annually or as one-offs.
