SPIRIT WORLD

Soju is one of the world’s best-selling spirits, but most of it is consumed in Korea. Likewise for baiju in China, or Japanese shochu, which are just starting to trickle into Canadian cocktails and bars. South American aguardiente -style brandies (such as film director Steven Soderbergh’s Singani 63 brandy from Bolivia or Träkál from Chile), mastiha liqueur made from Greek island tree sap or Canada’s own Acerum, distilled from maple syrup, are among the innovations distilling global tastes.
