Brut Bubbly

DRINKING DAMSONS The last plums of the year are, arguably, the best— not to mention the prettiest, thanks to the dark purple and blue hues of the end‑of-season damson and Brufre varieties. Not just for snacking, they also make great drinks, especially when paired with herbs and spices, like thyme and ginger.

Because most fruit already contains a little natural sugar, it’s important to use a dry sparkling wine for Bellini-esque cocktails. And, with all sparkling cocktails, the more robust the bubble, the better the drink. Look for “brut” (less sweet) cava, Crémant, Prosecco or Ontario sparkling wine made according to the “traditional method” (the same method used to make Champagne) for best results.
