Check out honey’s dark side with some Ontario-­ made buckwheat honey, a robust sweetener that could pass for molasses. Some expressions have slightly bitter notes and rich sweet flavours, making it ideal for complex mulled cocktails and mixing with aged spirits, as in this Buckwheat Honey Toddy.

DID YOU KNOW? Because it’s high in acidity and has natural antibacterial qualities, honey has a long shelf life. Raw honey will eventually crystalize, but that doesn’t mean it has gone bad. Simply immerse the tightly closed jar in a warm water bath until the crystals melt.
