Sushi Pizza Waffle This recipe makes creating sushi at home a breeze, no rolling required. The cooked and seasoned rice goes into the waffle iron, becom ing a crisp base for a sushi pizza. It’s topped with salmon, avocado, nori and sesame seeds. If raw fish isn’t your thing, it’s also delicious with flaked cooked salmon or slices of smoked salmon. 1 cup (250 mL) sushi rice 3 tbsp (45 mL) rice vinegar 1 tbsp (15 mL) sugar Nonstick cooking spray 6 oz (170 g) sushi-grade salmon, skin removed 1 small ripe avocado 11/2 tsp (7 mL) soy sauce 1 tbsp (15 mL) mayonnaise, preferably Kewpie 1 tsp (5 mL) toasted sesame seeds 2 tbsp (30 mL) thinly sliced green onion 2 tbsp (30 mL) finely chopped nori 1. Cook rice according to pack age directions. In a small bowl, whisk vinegar and sugar until sugar is dissolved then pour into the pot and stir into cooked rice. 2. Coat a round 7-inch (18-cm) waffle maker with nonstick cooking spray and preheat to medium.
