Pumpkin Pie Cannoli We’ve taken a classic Italian pastry and infused it with autumnal spices and spirit. Using pizzelle cookies for the shell is a clever shortcut that still delivers the cannoli’s pat ented crunch. For ideal results, prepare filling and shells ahead and pipe to order when ready to serve. You could also use candied pumpkin seeds or chopped white chocolate to garnish instead of chocolate chips, and a dusting of icing sugar never hurts. 12 pizzelle cookies 1 cup (250 mL) drained whole milk ricotta cheese, preferably Santa Lucia (see TIP) 1 cup (250 mL) unsweetened pumpkin purée 1/2 tbsp (7 mL) pure vanilla extract 1 cup (250 mL) icing sugar 1 tbsp (15 mL) pumpkin pie spice 1 tsp (5 mL) cinnamon Salt to taste Mini chocolate chips for garnish (optional) 1. Working one at a time, microwave each pizzelle on a piece of parchment paper until softened, 15 to 20 seconds. Working quickly and carefully (it will be hot!), wrap cookie around a large whisk handle or something similar in size, pinching edges together to create a cannoli tube. Repeat until all pizzelle have been shaped into tubes. 2. In a large bowl, whisk ricotta, pumpkin purée and vanilla until combined. Sift icing sugar, pumpkin pie spice, cinnamon and salt into bowl. Whisk until fully combined. Transfer mixture to a piping bag. Pipe filling into cannoli shells until full. Sprinkle edges with chocolate chips, if desired. Serve immediately. Here’s the third side of the triangle: a creamy amber ale with a medium body and relatively subtle pumpkin pie–spice flavours. TIP If you can’t find a predrained brand of ricotta, line a large sieve with four layers of cheesecloth and place over a bowl. Place a container’s worth of ricotta in sieve and refrigerate overnight.
