WHEN WE THINK MOTHER’ S DAY we often think brunch—but how about giving mum the full treatment and doing a dinner? The menu for our tribute to mum is easy with a lot of make-ahead dishes and only the grilling of the seafood needing to be done at the last minute. This main allows dad to do his thing with the grill. Grilling seafood is a little more complicated than steaks but the final result is both excellent and truly appreciated. If you want to use other sauces than the ones suggested, let your imagination be your guide or buy some good ones. A chilled soup is an elegant way of starting this dinner, and finishing with a sweetly sticky crepe with apricots (or strawberries, rasp- berries or peaches) will give mum untold pleasure. Plan the cooking over two easy days and dinner will be brilliant.
