Tofu is the chameleon of the kitchen, a blank flavour canvas offering countless possibilities for taste, texture and cuisines, whether Asian or Western, traditional or modern.
The Orient is steeped in mysteries. Many Westerners think tofu is one of them—the mystery being why anyone would eat flavourless blocks of spongy white plant protein. In Asia, on the other hand, where tofu has been prepared in hundreds of ways for thousands of years, the mystery is why anyone wouldn’t eat it every day at breakfast, lunch and dinner. East and West, the old conundrum. It’s time the twain met.
