1 Combine flour and salt in a bowl. Make a well in the centre. Whisk together eggs and ¼ cup (60 mL) of the milk and then pour into well. Whisk slowly in the centre, gradually in- corporating flour. Pour in remaining milk and whisk until smooth. Whisk in butter and sug- ar. Pour batter through a sieve to remove any lumps. Stir in grated lemon rind and ginger. Batter should be thick enough to lightly coat a spoon. Refrigerate for 30 minutes to 1 hour. 2 Beat cream into mascarpone along with mint, cardamom and icing sugar. 3 Toss half of apricots with¼ cup (60mL) late harvest Riesling. Fold apricots and Riesling into the cream. Refrigerate until needed and bring to room temperature before serving. 4 Place remaining apricots, remaining late harvest Riesling and salt in a small pot. Sim- mer together over medium-low heat for 5 min- utes. Remove and reserve apricots and simmer sauce for another few minutes until slightly thickened. Reheat before serving. 5 Heat a 7-inch (18-cm) nonstick skillet on medium heat. Brush pan with vegetable oil. Lift pan off burner and scoop in 2 tbsp (30 mL) of batter, swirling pan to evenly coat the base. Return pan to heat and cook until bottom of crepe is just golden, about 1 minute. Flip using spatula or fingers and cook another 30 seconds or until light golden. Remove to a plate and reserve. Repeat with remaining mix- ture, brushing pan occasionally with oil. You may need to adjust heat depending on your stove. The first crepe never turns out quite right. 6 Pile crepes on top of each other to cool. To assemble, reheat crepes in microwave until warm. Spread about 2 tbsp (30 mL) filling into each crepe. Roll and place on serving dishes. Spoon over reserved apricots and warm sauce. Garnish with a piece of mint.
