TIP  To make chive oil, bring a small pot of water to a boil. Add 1 cup (250 mL) chives. Bring to a boil and immediately remove from heat. Drain and run cold water over chives until cold. Pat dry with paper towels. Place in blender, add a pinch of salt and, if you want some spice, a pinch of chili flakes. Add ½ cup (125 mL) olive or vegetable oil and blend until smooth. Keeps refrigerated for a month.

1 cup (250 mL) diced red potatoes 5 cups (1.25 L) chicken broth 4 cups (1 L) spinach, washed, stemmed and sliced Salt and freshly ground pepper 1 tbsp (15 mL) lemon juice

3 tbsp (45 mL) chive oil (see TIP) 3 tbsp (45 mL) 35% whipping cream

1 Heat oil in a pot on medium heat. Add leeks and garlic scapes and sauté for about 3 min- utes or until leeks start to soften. Stir in pota- toes, then add chicken broth and bring to boil. Cover and simmer for 15 minutes, or until gar- lic scapes and potatoes are soft. Add spinach and cook for a further 5 minutes or until spin- ach is wilted completely. 2 Purée soup in a blender. Pour into a bowl and season well with salt, pepper and lemon juice. If soup is too thick, add a little more broth. Chill for 4 hours or overnight, covered. 3 Spoon soup into bowls. Place chive oil in a teaspoon and swirl around soup. Repeat with whipping cream to make a pleasing pattern. Serves 6

WHAT TO SERVE

Garlic scapes, the curled tops of garlic bulbs, are just coming on the market and they make an outstanding soup. If not available, use 4 fat cloves of peeled garlic and 1 cup (250 mL) chopped green onions. It’s not quite as mel- low but really flavourful. Bunched spinach has more taste than baby in this soup. If you do use baby spinach, don’t slice it. 2 tbsp (30 mL) olive oil 3 leeks, white and light green parts only, chopped, about 4 cups (1 L) 2 cups (500 mL) chopped garlic scapes
