Harissa is North Africa’s signature hot sauce with different variations gracing tables from Morocco to Libya. It is a thick, aromatic paste made from chilies, garlic and a mixture of spices and herbs. Use it in stews, soups, curries, marinades and as a condiment. A little goes a long way.
