SAMBAL

“Sambal” means hot chili sauce and there are over 300 varieties. Indonesian sambal oelek— ground fresh chilies with vinegar and salt—is the original and most well known, but other versions have more ingredients with more complex flavours. Multiple uses for sambal include stirring into rice, flavouring meat, tossing with stir-fried vegetables or adding to mayonnaise for a dip.
