SEASONAL  SPIRITED SUNDAES

KEY LIME PIE SUNDAE Tangy and refreshing, crunchy and rich: what more could you ask of a sundae? 2 to 3 cups (500 to 750 mL) key lime ice cream or lime sorbet 2 to 3 cups (500 to 750 mL) coconut ice cream Pineapple-Rum Compote (recipe on page 129) Easy Lime Curd (recipe on page 129) 3 meringue nests, each 3 inches (8 cm) in diameter, crumbled OPTIONAL GARNISHES Finely grated lime rind Toasted sweetened flaked coconut

Fresh lime slices Whipped cream

1 Just before serving, layer ice creams, Pine- apple-RumCompote, Lime Curd and crumbled meringue nests in sundae glasses or dessert dishes. Top with your choice of garnishes. Serves 6
