THE IDEA OFA“CHEFS’ ASSEMBLY” is a modern phenomenon in the U.S.—and now also in Toronto. Chefs who have restaurants elsewhere gather in a single loca- tion and set up their own food court of individual stalls. Sometimes they specialize in one or two things, some- times their menu is longer, but the mood is casual and convivial—and the food is great!     That was our inspiration for this article, bringing four chefs together in our own Food & Drink assembly, each one armed with a recipe that has personal meaning

for them on Mother’s or Father’s Day. Julian Iliopoulos offers his own delicious take on Argentinian cuisine at Tanto while Nuit Regular is the owner-chef of Kiin, one of Toronto’s top Thai restaurants. Matthew Betsch is chef de cuisine at Alobar, the latest scion of the Alo restaurant group; and Renée Bellefeuille is the busy exec­ utive chef of the Art Gallery of Ontario, in charge of its many food outlets and events. All we asked was that their dishes should be seasonal and easy to make at home. It goes without saying that they are also totally delicious.
