We’ve paired Duntroon’s Raindance Rhubarb Infused Apple Cyder with this complex salad of halloumi and freekeh as it has a similar earthy personality. The tart, rustic flavour from the rhubarb works perfectly with the sumac in the za’atar and the complementary apple flavour adds a pleasant mild sweetness to each bite.
