Matches made in heaven White wines generally play nicely with food. Even if they don’t contribute much to a match, they can be relied on to refresh and stimulate the palate. But when they do offer more interesting effects and when they harmonize really well with what you’re eating, the results can be spectacular.

Classic combinations We started with three splendid wines (two of them from Ontario) and then searched our recipe archives for the recipes that would bring out the absolute best in our chosen bottles.

Château des Charmes Barrel Fermented Chardonnay VQA LCBO 81653, $14.95

Rodney Strong Charlotte’s Home Sauvignon Blanc VINTAGES 449207, $19.95 Light, crisp and dry but gorgeously laced with citrus and passion fruit, this is a Californian beauty. serve it with Goat Cheese Gougères with Green Salad Goat cheese and Sauvignon Blanc are famous friends. In this recipe, the light, puffy, cheesy gougères are well paired with a simple green salad that also complements the wine.

Featherstone Black Sheep Riesling VQA VINTAGES 80234, $18.95 Off-dry and rich, full of tangy lime, it also showcases the flinty minerality of Ontario’s benchland. serve it with Grilled Thai Shrimp & Mango Lime, lemongrass, ginger and mango in the recipe find delicious resonances in our Riesling. They’re definitely singing in the same choir!

A hint of smoky vanilla oak seasons pear and quince notes; bright acid keeps everything lively. serve it with Cashew Chicken Cutlets Chardonnay—especially lightly oaked Chardonnay—loves coconut. It also loves chicken whether fried, roasted or crisply baked like these juicy, nut-crusted cutlets.
