LCBO Food & Drink Early Summer 2022

Dip, Scoop, Snack

Pair these snacks from our archives with rum cocktails. Both are delicious topping tropical tostones (fried plantain crisps), but tortillas or corn chips, pita or flatbread, wonton crisps and crackers are also great vehicles. Find these recipes at lcbo.com/fdearlysummer22

DARK RUM AND CRAB DIP This warm dip, spiked with dark rum, hits all the right spicy, creamy notes.

BLACKENED JERK CHICKEN ON TOSTONES Store-bought jerk spice paste and a fruity dollop of jam tropically flavour chicken thighs.

DID YOU KNOW. . .

Classics Reinvented

IN THE NAVY

Swap in rum for fresh spins on classic cocktails. Try an Old Fashioned with Havana Club Cuban Smoky ( LCBO 19820, $42.95 ) instead of bourbon, an Espresso Martini with rum not vodka, a Rumgroni with equal parts aged rum, Campari and Oloroso sherry in place of sweet vermouth, or a Rumzerac with aged rum in for rye or brandy.

Daily rations of lime once helped British sailors ward off scurvy, and sweetened rum helped make the medicine go down! “Navy” or “overproof” label terms come from the tradition of proving or proofing the rum’s strength. Today, spirits like Jamaican Wray & Nephew White Overproof Rum ( LCBO 326223, $43.30 ) bring tropical fruit flavours to rum punch. Make a batch using the traditional “one of sour (citrus juice), two of sweet (sugar or syrup), three of strong (rum), four of weak (water or fruit juice)” recipe.
