Creamy coconut ice pops are flexible enough to be made with a mix of fruit, so use what’s in season and on hand. Fresh Fruit “Cream”sicle-Style Pops
1. Finely grate 2 tsp (10 mL) zest from lemon. Squeeze 2 tbsp (30 mL) fresh lemon juice from lemon. Add to blender along with fresh fruit. Blend until puréed. With motor running, pour coconut milk through the hole in the blender lid. Blend until smooth, 1 to 2 minutes. Taste and sweeten with honey, to your liking.
1 lemon 2 cups (500 mL) strawberry halves, raspberries or pineapple chunks, or a mix 1 can (400 mL) coconut milk (not light) or coconut cream 1 to 2 tbsp (15 to 30 mL) honey (optional)
Garnish treats with dried edible lavender buds. —— Using a cocktail zester, pull thin zest wisps from citrus and sprinkle over ice cream.
2. Pour mixture into 10 ice pop-moulds that each hold about 1/3 cup (80 mL). Add sticks. Freeze until firm.
