THE DARKER SIDE OF ROSÉ

Bright, Fresh and Lively These aromatically perfumed and floral rosés feature bright, juicy acidity and, often, lower alcohol. The colours are deeper but transparent— they practically shimmer in the glass. Some have a little residual sugar (sweetness) and even a touch of spritz, but they can be dry, too. PAIRINGS Oysters on the half shell, ceviche and sashimi are delicious matches, as are herb quiche or light pasta. Don’t overthink it! OCCASIONS For brunch, a light luncheon or an afternoon gathering with friends, these lively wines will add a little zip and let the sun shine in. Château la Tour de l’Évêque Rosé VINTAGES 319392, $19.95 A customer favourite, this rosé is a blend of red and white grapes led by Cinsault and Syrah. Zesty and berry-driven, it’s highly versatile with food. Aveleda Fonte Rosé LCBO 23758, $12.30 Bright acidity and refreshing spritz make this berry-forward rosé, at only 11% ABV, a great sipper with lighter fare. It’s made with a blend of local Portuguese grapes.
