What is gin? Gin’s defining flavour, no matter where in the world it’s made, is juniper, a shrub common to Canada’s forests and gardens. Juniper berries give gin its distinctive evergreen whiff, with the most coveted crops found in places like Italy and Hungary. Infusing other botanicals (flavourful plant parts such as nuts, seeds, leaves, roots, flowers and fruits) gives each gin distinct character.
