Many people, particularly in the U.S., serve beef instead of turkey, and our beef dish has overtones of both Spanish and French cooking, providing a genuine flavour blast. It looks and tastes delightful hot but, as an added attraction, it’s also spectacular cold. And finally, saddle of lamb is unusual and full of rich flavour for those seeking a very different experience.     These dishes need not be limited to the big holiday feast. Try them for different occasions and you will be a star.

ALTHOUGH TURKEY IS TRADITIONAL for the holiday meal in Canada, there are many festive non-traditional options for people who want to experiment. My particular favourite is duck. With its crispy skin and succulent meat, it is especially good if you have a small group. For those who don’t eat meat but do eat fish, Salmon Wellington is the perfect choice. Using two whole fillets of salmon with the stuffing sandwiched inside, it looks spec- tacular and is also exceptionally flavourful.     Pork is traditionally served in some countries at Christmas.
