THE CAMOMI LE FL IP Dry-shake this cocktail first, without ice, to create a velvety foam top. The luscious foam is part of a flip’s charm and the perfect land- ing for the dusting of spice. 1 In a cocktail shaker, combine 1½ oz gin, ½ oz (15 mL) egg white, ½ oz Camomile Syrup (recipe follows), 1 oz white grape juice, and the juice of ¼ lemon and shake until foamy. Add ½ cup (125 mL) ice, shake until chilled, and strain into a coupe or Martini glass; gar- nish with a sprinkle of nutmeg. Makes 1 drink CAMOMI LE SYRUP Combine 1 cup (250 mL) sugar and 1 cup (250 mL) water in a small saucepan over me- dium heat; stir to dissolve sugar and bring to a boil. Remove from heat and add 1 camomile tea bag; let steep for 30 minutes. Remove tea bag, cover and refrigerate until chilled. Syrup will keep for 1 week in refrigerator. Makes 1½ cups (375 mL)

1 Cut tuna into 4 or 5 strips, each 1 inch (2.5 cm) wide; season with salt and pepper. Pour sesame seeds onto a small plate and, working with 1 strip of tuna at a time, press into seeds to fully coat each side. Heat oil over medium-high and sear strips 30 seconds per side; set aside. 2 In a small non-reactive bowl, combine 1 tsp (5 mL) lime juice and the red onion; season with salt. 3 In a separate small bowl, combine the re- maining 1 tbsp (15 mL) lime juice and fish sauce; add avocado, chili and lime leaves. Gently stir to separate avocado pieces and coat all in lime juice mixture. Season with freshly ground pepper. (If making ahead, keep components separate, cover and refrigerate for up to 4 hours.) 4 Cut tuna strips into pieces ½ inch (1 cm) thick. Top individual chips with a single piece of tuna, a generous tsp (5-plus mL) of the avo- cado mixture and a scant ½ tsp (2 mL) of the onion mixture. Serve right away.

CHERRY’S SHADOW This bittersweet tipple is a great chill-chaser. Gorgeous, almost black Luxardo-brand mara- schino cherries are nothing like the more widely available fluorescent red maraschino cherries you may be familiar with—look for them at specialty grocers. 1 In a cocktail shaker filled with ice, combine 1½ oz rye, ½ oz Amaro Averna, ½ oz Luxardo cherry syrup (from jar of cherries) and a dash of Angostura bitters. Shake sharply and strain into a Martini glass. Garnish with a Luxardo cherry or 2. Makes 1 drink
