Prime Rib and Highlander Blacksmith Smoked Porter LCBO 362772, 650 mL, $5.00 Prime Rib is a classic on any holiday table. This decadent cut of meat is perfectly suited to porter. Highlander’s smoked version is a great match on many fronts. Its peaty smoke and roasted espresso aromas nicely complement the bold caramelized flavours of a well-seasoned crusty exterior, while the slightly bitter finish is a great contrast to the sweetness of the meat within.

Turkey Sandwich with Fuller’s Extra Special Bitter LCBO 369173, 4 pk, $12.15 Is there anything more rewarding than the “day after” turkey sandwich? The sandwich alone warrants the effort you made to roast the turkey in the first place. When you have a mo- ment to sit and enjoy your well-deserved leftovers, why not pair them with this stellar version of a British bitter. Round and robust with pleasing notes of toast and caramel, it will elevate your sandwich to another level. 12

Tortière & Great Lakes Winter Ale LCBO 90845, 750 mL, $6.95 This decadent meat pie is a classic Québecois favourite, and brings a touch of homespun festiveness to any holiday table. Great Lakes Winter Ale is full of the aromas of the holi- days, says Leanne, “with orange zest, cloves, honey and cinnamon.” This medley of flavours works exceptionally well with the traditional mixture of pork and beef used in the prepara- tion of the dish.

Oysters and Marston’s Oyster Stout LCBO 457663, 500 mL, $3.50 Oysters and stout are a match not to be fooled with. A match that at first glance should not make sense, it in fact works very well. The briny, salty nature of raw oysters fares splendidly with the dry, bitter roasted notes of stout. Histori- cally the combination was a poor man’s meal in the pubs of Victorian England. Nowadays we can consider it a much more lavish treat.

ness makes the Schneider Weisse a great match as the German wheat beer has just the right amount of mouth feel and toastiness to be a fine complement without overpowering the food’s flavour. It’s spicy, fruity and refreshing, a great beer for brunch.
