Snow on the Seine

A play on the classic French 75, this wonderful light drink is the perfect greeter cocktail to start off your evening, combining gin, lemon and tea syrup topped with Champagne. In a cocktail shaker filled with ice, add ½ oz gin, ½ oz lemon juice and ½ oz Earl Grey Tea Syrup (recipe follows). Shake and strain into a flute. Top with 4 oz Champagne and gar- nish with a lavender sprig. Makes 1 drink EARL GREY TEA SYRUP To a heatproof container, add 1 cup (250 mL) sugar and 1 Earl Grey tea bag. Add 1 cup (250 mL) boiling water and stir to dissolve. Remove tea bag and allow to cool. Cover and refrigerate for up to 1 month.
