As the name suggests, Winterweiss is a seasonal beer, available only during the dark, cold months of the year. So what better choice for the holiday sea- son? And it is also a delightful match for our creamy, peppery pasta dish. Also known as a dunkelweiss, this dark, malty German-style lager has a mild bit- terness that works well in combination with the hot peppers and the bitter rapini in the recipe. And it seems to really boost the flavour of the pancetta, bringing out all its salty, crackly glory.
