It takes a special beer to work with the sur- prisingly complex flavours of this dish. Marie’s Rendezvous is more than up to the task. Available in late November, it’s a weizenbock, a strong version of a German type known as a Weiss (or white) beer, historically connected with Bavaria. Slightly dry on the palate and in its finish, the beer’s subtle banana and fruit overtones complement this recipe’s robust mushrooms and chicken while playing nicely off the tomatoes’ tang. Marie’s low hoppiness avoids a clash with the rosemary. And its viscous mouth feel works well with the silky polenta.
