Chiarli Castelvetro Lambrusco LCBO 604, $9.95

Lambrusco is a unique spar- kling red wine that comes from around the cities of Parma, Reggio Emilia and Modena in the north of Italy. The wines are named after the grape from which they are made and are designed to be drunk young. If you visit the area you’ll find them on every dining table of every restaurant. They can range from bone-dry to sweet. The Chiarli Amabile version is off-dry, meaning there is a light touch of residual sweet- ness and it makes for a per- fect aperitivo. It is refreshing, effervescent and full of bright aromas of fresh grape jelly and violets. It makes for a terrific pairing with the pork sausage, which has been flavoured with some of the typical spices used in the production of the region’s cured meats and salamis.
