From a sophisticated crown roast of lamb, to an impressive crown roast of pork, or a decadent rack of veal or venison, each with accompaniments, this collection of recipes offers a selection to suit any festive occasion. The real beauty of these roasts is that they are no more difficult to make than any other roast and require minimal equipment—just a sturdy, shallow roasting pan, a wire rack that fits in the bottom (for those calling for it) and an accurate digital thermometer and you’re all set. One caveat: most of these cuts require placing a special order, so plan ahead and call your butcher well before your dinner party.
